Our philosophy

# We cook what this land gives.

Product, season, identity.

El Molino is the restaurant of **Hamlet's Friends**, a rural project in Nuño Gómez, a village in Toledo province, one hour from Madrid. This is what people call *España vaciada*, the emptied interior of Spain. Here, side by side, are wooden cabins, a farmhouse, a coworking space, a vegetable garden and this restaurant. The best way we know to defend a territory is to eat it.

Much of the produce on the menu comes from our own garden, a few metres from the kitchen. The rest we buy from people who look after their animals, respect the land's own pace and are in no hurry: the herder who grazes their flock on the sierra, the traditional olive mill that presses our oil, the local bodega, the baker from the next village over. Someone else's work is in every dish before it ever reaches our kitchen.

Liked something? Ask us who made it. We know their names and their villages, and their addresses if you want them. Plenty of them sell direct, and Saturday morning is a good time to go.
