Our philosophy

We cook what this land gives.

Product, producer, place.

El Molino is the restaurant of Hamlet's Friends, a rural project in Nuño Gómez, a village in the province of Toledo, one hour from Madrid. Here, in what some call España vaciada — Spain's emptied interior — wooden cabins, a farmhouse, a coworking space, a vegetable garden and this restaurant all sit side by side. The best way we know to defend a territory is to eat it.

That's why our kitchen starts with the producer, not the recipe book. Much of the produce on the menu comes from our own garden, a few metres from the kitchen. The rest we source from people who care for their animals, who respect the land's own pace, and who are in no hurry: the herder who grazes his flock on the sierra, the family mill that presses our oil, the local bodega, the baker from the next village over. Every dish quietly carries the signature of whoever made it possible before it reached the kitchen.

We're not trying to surprise you with technique, or reinvent anything. We want you to leave the dining room knowing exactly where everything you ate came from — and, if you feel like it, to walk over and see the garden, or visit the herder some Saturday morning. To us, that's kilometre zero: the short distance between field and plate, and the short distance between the person who grows it and the person who cooks it.

Meet the producer

Behind every dish is someone who gets up earlier than we do.

If you enjoyed something you tried, ask us about its producer. We know their names, their villages, and, if you're interested, their addresses too: many sell directly, and a Saturday morning is a good time to go.
